Healthy Black Raspberry Pie
My favorite food for summer – berries! Pick ’em red, black, or blue, and then make this healthy version of black raspberry pie with chia seeds instead of starch. You’ll never turn back!
Healthy Black Raspberry Pie
INGREDIENTS
Crust
- 1 1/2 cups gluten-free oats
- 3/4 cup walnuts
- 3/4 cup raisins
- 1/2 cup coconut oil
Filling
- 3 cups black raspberries
- 1/2 cup chia seeds, soaked in 1 cup water
- 1/4 cup coconut sugar
- 1 teaspoon lemon juice
Soak chia seeds in water for at least 5 minutes. In the meantime, add all crust ingredients to a food processor and mix until it starts to form into a dough-like consistency. Add water if it’s too dry. Press the crust into the bottom of a pie pan.
Add coconut sugar and lemon juice to chia mixture (should be like a gel), pour over black raspberries and mix lightly. Pour the filling into the crust. Chill to set and enjoy!
This recipe looks so good, Jen! We love, love, LOVE berries around here so I can’t wait to try this version of pie (that I won’t feel so guilty about eating :))
