Fall Recipe Round-Up
One of the greatest things about being nature fed is eating with the seasons.
I’ve been an active harvester since spring, and with all the late-summer and fall goods, the fun hasn’t stopped!
But if I may lament for just a moment… the fall doesn’t last long enough. I feel like it blows right by and I didn’t soak in enough sunshine-filled cool days, crispy night camp-outs, or long hikes on the trail covered with golden leaves.
We could all pull out our sweaters, and sit back and enjoy the colors and cooler temperatures in an effort to get more out of fall, but one simple way to get the most out of the fall is to dig in and make some delicious and savory fall food!
Eating seasonal fare is not only great for local agriculture and farmers, but you can also stock your home with healthy food for the winter. This is the perfect time to can, freeze, or dry fresh veggies and fruits you find at the farmer’s market or store, and save money all year long with a freezer of full of greens for soups, and Mason-jars filled with applesauce and tomatoes!
So, when I’m on the look for fresh ideas to enjoy seasonal food, I go to blogs, pour over Pinterest photos, and always find unique creations that give me inspiration. In the mix of it all, I find something that helps me get food on the table for the week. Spinach and Walnut Spaghetti Squash
A swing on spaghetti folks. If you’ve never dug your noodles out of a bright yellow spaghetti squash, cook one up right now! The magical result is nutritious, and Lisa from the Vegan Pact makes it even better with a few sweet additions.
Cinnamon Sweet Potato & Kale Delight
Simplicity at its finest. Cook up a batch of sweet potatoes for the week and then use some for this quick dish (don’t forget the walnuts!) from Amanda Hayes via Kris Carr’s Crazy Sexy Wellness blog.
