Radish Pasta Salad
INGREDIENTS 5 radish, chopped2 zucchini, chopped 1 lb brown rice pasta ½ onion, diced
1 clove garlic, minced 1 tbsp capers 1 tbsp olive oil 1 tbsp apple cider vinegar 1 tbsp balsamic vinegar
½ teaspoon parsley Pinch of cayenne pepper Sea salt, to taste Optional: feta cheese METHOD Boil water and cook pasta according to package directions. In the meantime, chop up your veggies. Allow pasta to cool for 5-10 minutes after it’s done cooking, then add all veggies, spices, and remaining ingredients. Toss together lightly and serve cool.
