Blueberry Cream Swirl Pie
Blueberries are low on the glycemic index, so they have a favorable impact on the blood sugar. They are high in antioxidants, and freezing berries doesn’t negatively influence the levels of antioxidants! Buy organic blueberries when you can — Organically grown blueberries have been found to have significantly higher concentrations of antioxidants than conventionally grown blueberries.
INGREDIENTS
Crust:
· 1 cup walnuts
· 1 cup pumpkin seeds
· ¼ cup raw honey
· 1 tsp. salt
· 3 drops of doTERRA™ lemon essential oil
Filling
· 1 cup blueberries (fresh or frozen)
· ½ cup dates
· ¼ cup water
Topping
· ½ cup cashews
· ½ cup coconut milk
· 3 dates
· 2 T. coconut oil
METHOD
Process pumpkin seeds, walnuts, honey, salt, and essential oil in food processor until a dough forms. Press into the bottom of pie dish to make a crust.
Put blueberries, dates, and water into a high powered blender and process until smooth — should be a thicker consistency. Pour over crust.
Put cashews, coconut milk, coconut oil, and dates into a high powered blender and process until smooth and thicker consistency. Pour over top layer. Take a knife and move it through the layers to make the ‘swirl’ look on top.
Place in freezer until set.
